【摘要】:ThispartofISO11816|IDF155specifiesafluorometricmethodforthedeterminationofalkalinephosphataseactivityincheese.Thismethodisalsoapplicabletosoftcheesesandsemi-hardcheesesfordistinguishingrawmilkcheesesfromcheeseproducedwithpasteurizedmilk,providedthatthemouldisonlyonthesurfaceandnotalsointheinnerpart(e.g.blue-veinedcheeses).Thismethodcanalsobeusedtochecktheproperpasteurizationofcheeseoritsrawmaterial.Inlargehardcheeseswherethewheycurdmixtureisscaldedattemperaturesabove50℃,hightemperaturesremainforarelativelylongtime.Thisisespeciallythecaseinthecentreofthesecheeses,thuspromotingphosphataseinactivation.Todistinguish,therefore,betweenhardcheesesfromrawmilkandhardcheesesfrompasteurizedmilkusingthismethodrequiresaspecificsamplingtechniqueforthecheese(seeClause7).
